Visit the touristical city of Alicante ...
If you're travelling by plain to Santa Rosalia Lake and Life resort, you might arrive at Murcia or Alicante Airport. Both cities have an old centre and lots of touristical sights. Alicante is located on approximately 1 hour and 15 minutes from the rental apartments on the resort. In the meantime you can visit the city, or go to Elche/Aix, which is close by to Alicante.
In Alicante you'll find a nice coffee brewery called Madness, a large harbour and a grand boulevard with several small pop-up shops and lots of restaurants.

If you walk along the beach you'll find nice places to drink and on the other side of the road there is an entrance to the castle up the hill, from the Castle of Santa Bárbara you have a great vieuw on the city and the harbour of Alicante.
Visit the real Spanish working-class district "Santa Cruz" to experience the real Spanish culture. You will find this district when you walk from the center to the Monte Benacantil hill.
